LEMON VODKA SORBET

 

Ingredients:


• 250g caster sugar

• 250ml lemon juice

• 45ml vodka


Methods:


1. Put 300ml water, the sugar, lemon juice and vodka in a saucepan and dissolve the sugar by stirring constantly while brining the mixture to boiling point.


2. Once the sugar has dissolved, remove from the heat and allow to cool until it is room temperature.

3. Pour the mixture into a plastic container and put into the freezer.


4. Remove the mixture from the freezer after 1 hour and whisk to break up the ice crystals, then return to the freezer. Repeat this step three more times.


5. After the sorbet has been whisked for the third time, return to the freezer for a few more hours to freeze solid. Leave it there until you are ready to eat.

 

Note: this recipe serves 4-6 people.
