Making Potato Salad with Chives

Ingredients:


• 1/2 garlic clove

• Sea salt

• 1 big bunch of fresh basil

• 1 handful of pine nuts

• 1 handful of grated Parmesan cheese

• Extra virgin olive oil

• 1 lemon (optional)

Method:


1. Place the potatoes into a pan and fill with just enjoy water to cover. Bring to boil, then simmer over low heat under tender for about 10 minutes. Drain and cool under cold running water.


2. In a large bowl, stir together the sour cream, mayonnaise, and 1/2 a cup of chives.


3. When the potatoes have cooled, stir them into the mixture above. Season with salt and pepper, and garnish it with the remaining chives.
