Recipe: Bean Burgers


Fancy trying a go at making your own veggie burgers? Follow this super simple recipe and treat one of your flatmates (or all of them) to a homemade meal! 🍔

BEAN BURGERS

 

Ingredients:


• 4 tbsp olive oil

• ½ small red onion, peeled and finely chopped

• 1 garlic clove, peeled and crushed

• ½ small red chilli, deseeded and finely chopped

• 400g can mixed beans, rinsed and drained

• Pinch of ground cumin

• Pinch of chilli powder

• 1 tsp ground coriander

• 1 tbsp fresh coriander or parsley, finely chopped

• 1 large egg

• 100g dried breadcrumbs

• Salt and pepper

• 2 burger buns, sauces, and salad to serve


Methods:


1. Heat 1 tablespoon of the oil in a small frying pan. Add the onion, garlic and chilli and cook for a couple of minutes until softened and fragrant.


2. Place the onion, garlic, chilli, beans, spices, herbs and salt and pepper together into a bowl and mash the ingredients together well using a potato masher.


3. Form the mixture into two large burgers. Place on a plate, cover with cling film and chill for at least an hour to firm up.


4. Preheat the oven to 200-C Fan/Gas Mark 7.


5. Break the egg into a shallow bowl and beat with a fork. Scatter the breadcrumbs on a plate. Heat the remaining oil in a non-stick frying pan over a medium heat.


6. Remove the burgers from the fridge and cover them all over in the egg, then the breadcrumbs, and place them in a pan.


7. Cook over a medium heat for around 10 minutes on each side to brown. Transfer the burgers to the oven and bake for 15-20 minutes until hot throughout.


8. Serve in burger buns with your choice of sauces and salad.
