Recipe: Breakfast Burritos


Start curing that hangover with this easy recipe for breakfast burritos! If you prefer your food a bit milder, just swap out the jalapeños and hot sauce for some chorizo, bacon and/or mushrooms 🍳

BREAKFAST BURRITOS

 

Ingredients:


2 large eggs

2 tbsp milk

10g butter

1 tortilla wrap

• ¼ red peppers, deseeded and finely chopped

• 1 small tomato, chopped

• 1 tsp chopped jalapeño peppers

• 1 tbsp grated mature Cheddar cheese

• Hot sauce, to serve (optional)

• Salt and pepper


Methods:


1. Crack the eggs into a bowl. Add the milk and season with salt and pepper. Whisk until well combined.


2. Melt the butter gently in a non-stick saucepan. Swirl around the pan.


3. Pour the egg mixture into the pan over a medium heat. Stir continuously until the eggs are scrambled to your liking. For just-set, softly scrambled eggs, they’ll take about 30 seconds, or for a firmer set, cook for 1 minute. Remove from the heat just before they’re cooked to your liking as they will continue to cook in the residual heat of the pan.


4. Place the tortilla onto a large plate. Transfer the eggs to the centre of the wrap. Add the chopped pepper, tomato and the jalapeños and sprinkle some cheese on top.


5. Roll up the tortilla and tuck in the ends to form a burrito.


6. Cut in half and eat without delay, with some hot sauce on the side if you like.
