Recipe: Coconut and Lime Ice Cream


Instead of buying some expensive tub of ice cream, try out this easy recipe for Coconut and Lime Ice Cream! It’s definitely weather appropriate ☀️

COCONUT AND LIME ICE CREAM

 

Ingredients:


300ml double cream

400ml can of coconut milk

120g caster sugar

Grated zest and juice of 2 large limes


Methods:


1. Place all the ingredients together into a large saucepan over a medium heat. Gently bring up to the boil, stirring constantly to dissolve the sugar.


2. Once the sugar has dissolved, remove from the heat and allow to cool to room temperature.


3. Pour the mixture into a plastic container with a lid. Make sure you use a large plastic box as the mixture will increase in volume. Put in the freezer for one hour.


4. Remove the mixture from the freezer after 1 hour and whisk with an electric whisk to break up the ice crystals, then return to the freezer. Repeat this step three times. It will increase in volume after whisking for the first time.


5. After the ice cream has been whisked for the third time, return to the freezer for a few more hours to freeze solid. Leave it there until you are ready to eat.


Note: This should serve 4–6 people!
