Missed out on our workshop? Worry not, here is our recipe for homemade basil pesto, with vegetarian alternatives! Please bear in mind that you will need a blender for this recipe.
HOMEMADE BASIL PESTO
Ingredients (to serve 4):
• 4 spoons of garlic
• 2 packs of basil
• 1/2 pack of pine nuts (you can also substitute this for 50g of cashew nuts, which is a cheaper alternative to pine nuts)
• 1/2 block of italian hard cheese (we used parmigiano-reggiano, but you can find a vegetarian-suitable alternative in Morrisons)
• 200ml of oil
• Half a lemon, squeezed
• 1.5 spoons of salt
• A pinch of pepper
Method:
1. Grind the cheese, salt and the nuts together.
2. Empty the blender contents into a bowl.
3. Put the basil leaves into the blender.
4. Squeeze in the lemon juice.
5.Add in the olive oil and garlic.
6. Blend the ingredients a little bit.
7. Now add in the mix of cheese, salt and nuts.
8. Blend until smooth.
9. Enjoy!
