JACKET POTATO & CREAMY MUSHROOMS WITH HERBS
Ingredients:
• 20g butter
• 1 garlic clove, finely chopped
• 1 large mushroom or 3-4 small mushrooms, sliced 5mm thick
• 2 tbsp cream or full-fat cream cheese
• 1 tsp chopped fresh herbs, such as chives or parsley
• Salt and pepper
• 1 freshly cooked jacket potato
Methods:
1. Melt the butter in a small saucepan over a medium heat.
2. Add the chopped garlic and cook for a minute or two until you can smell the garlic cooking.
3. Add the mushrooms and allow them to cook for 10 minutes or so until soft. Pour away any excess water that has come out of the mushrooms.
4. Add the cream or cream cheese and the erbs, and stir well to combine with the mushrooms. Season with salt and pepper and serve immediately on top of the jacket potato.
