Recipe: Vegetable and Halloumi Stew

VEGETABLE AND HALLOUMI STEW

 

Ingredients:


3 tbsp olive oil

1 large onion, peeled and thinly sliced into rings

2 garlic cloves, peeled and chopped

1 orange pepper, deseeded and cut into 2cm chunks

1 yellow pepper, deseeded and cut into 2cm chunks

1 courgette, thinly sliced into rings

400g can chopped tomatoes

1 tsp sugar

200g block of halloumi cheese, drained, patted dry, and cut into 1cm thick slices

Salt and pepper

Crusty bread or pitta, to serve


Methods:


1. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the onion and garlic and cook gently for 10 minutes or so until softened.


2. Add peppers, courgette, tomatoes and sugar, season with salt and pepper, and allow to bubble away for 45 minutes.


3. Meanwhile, cook the halloumi. Heat the remaining oil in a non-stick frying pan over a high heat until hot. Add the slices of halloumi and fry around 1 minute on each side until brown. Set aside.


4. Drop the halloumi into the stew just 5 minutes before you are ready to serve to heat through.


5. Serve hot with crusty bread or pitta and enjoy!


Note: This recipe should be enough to serve up to 4 people.
